DOC Definition

At D.O.C Shanghai we embrace the Italian tradition of Denominazione di Origine Controllata, celebrating the quality, sense and taste of Italy in everything that we do.



D.O.C - is the acronym for Denominazione di origine controllata ("Controlled designation of origin") is a quality assurance label for Italian food products, especially wines and various cheeses (Denominazione di Origine Protetta).

There are three levels of labels:

* DO — Denominazione di Origine (designation of  origin, seldom used)

* DOC — Denominazione di Origine Controllata (controlled designation of origin)

* DOCG — Denominazione di Origine Controllata e Garantita (controlled designation of origin guaranteed)

* DOP – Denominazione di Origine Protetta (Protected Designation of Origin)

 

All these require that vertified Italian food products be produced within the specified region of Italy, using defined methods and that they satisfy a defined quality standard.
